STRAWBERRY ETON MESS
The crunchy meringue, whipped cream and strawberry sauce is definitely a winning combination! Best served immediately
Ingredients for Meringues
100 g eggwhites
100 g caster sugar
100 g icing sugar, sieved
15 g corn flour
For meringues, preheat the oven to 120 degrees.
Whisk eggwhites in an electric mixer till stiff peaks form (2-3mins).
Sieve icing sugar and corn flour over the whites, fold to combine.
Spoon about 8 cm- diameter mounds onto oven trays lined with parchment paper.
Bake until meringues lift easily from the trays and are crisp but not coloured( 45-50 mins).
Turn off the oven and let them cool completely.
3 tbs lemon juice
2 tbs sugar
In a medium saucepan combine strawberries, lemon juice and sugar.
Bring to boil over medium-high heat.
Cook until the sauce starts to thicken.
You can also store it in a sealed container in a refrigerator upto a week.
200 ml Nestlé dairy whipping cream
Chill the bowl and electric whisk beforehand.
Pour whipping cream into bowl.
Just whisk for two minutes at medium speed until soft peaks form.
Arrange four dessert cups. Layer each with fresh sliced strawberries, spoonfuls of whipped cream, strawberry sauce and crushed meringue bits. Repeat the layers. Garnish with strawberries and sprig of mint!
