Medicinally researched and proved effects of cranberries are surprising as they contain a huge number of benefits for health one cannot imagine. The antioxidants and hippuric acid of cranberries help the body get rid of all kind of bacteria that are harmful in the longer run. Using cranberries in different recipes allows one to eat them in a variety of ways. Quinoa cranberry salad is such a unique recipe especially created for those who want to take care of their health.
Ingredients for Dressing
- Half cup water
- one fourth cup raw cashews
- 3 Tbsp fresh lemon juice
- 2 Tbsp sesame seeds or flaxseeds
- Tbsp lime zest
- 1 tsp minced garlic
- Half tsp raw honey
- One fourth tsp salt
- One fourth tsp freshly ground black pepper
Ingredients for salad:
- One cup dry quinoa
- Two cups water
- Two cups baby spinach
- Two green onions, slice
- One fourth cup dried cranberries
Instructions for making the dressing:
- First take a blender and combine all of the dressing ingredients in it.
- Blend it until it becomes a joined mixture.
- Now add water and keep the consistency of the mixture as you want it.
Instructions for making the salad:
- Take a mesh sieve and rinse quinoa thoroughly.
- Now take a small sized saucepan and transfer quinoa in it. Wait till quinoa gets boiled and let it simmer on low heat. Cover it for 15-20 minutes and whether it has absorbed the water or not. Now remove it from heat and place it on one side for five minutes.
- Take spinach, onions and cranberries and combine them all in another bowl.
- Toss it altogether in a way that they mix well.
- Now drizzle the dressing on the salad and serve it to your family and friends.
The salad serves 4 with 250 calories for each 1 cup serving.
